A flourless chickpea pancake is a savory, protein-rich flatbread or pancake made primarily from chickpeas (also known as garbanzo beans), either whole or in flour form. It’s naturally gluten-free, nutritious, and popular in various global cuisines, especially in Mediterranean, Middle Eastern, and Indian cooking.

Step 1

Rinse the chickpeas off completely, then pour them into a blender along with all other ingredients.

Step 2

Pulse everything in the blender for 30 seconds or until the batter is smooth.

Step 3

Grease a griddle or skillet with coconut oil or nonstick spray and pour the batter onto the skillet. Once the batter starts cooking, use the spatula to carefully flip the pancake over. Once both sides are cooked, remove from heat.

Step 4

Top the pancakes with extra peanut butter, fruit and maple syrup.
